Happy Birthday Lizzie!

Lizzie turned 6 years old yesterday! She is so happy to be six.

Six reasons why I love Lizzie:

6. She is versatile. She loves to handle worms and play princess dress-up. She plays with boy-friends and girl-friends.

5. She wants to be good. This is important, because reason #4 constantly conflicts.

4. She has the "Jakey" (comes from my side of the family. "Jakey" is the Jacobson character trait that is spunky). She teases, giggles, and is sometimes mischievous.

3. She is easy. She is not a picky eater and loves to try new foods. She doesn't whine, and has a healthy body.

2. She is a fun friend to her sisters and big brother. She is a good helper.

1. She is my daughter!

Jen, got your message about Pinto Beans. This is how we do it: 25lb. bag of Pinto Beans. Soak overnight (12 hours or so) in a giant rubbermaid container. Fill jars with beans leaving 1 inch at the top. Fill with water, put a knife down the side of the jar to release air bubbles, add 1 tsp. salt. Boil lids 1 minute, fix lid and ring on bottle. Pressure Cook 50 minutes at 10lbs. pressure. It makes about 35 quarts I think. We use it for chili, burritos, soup, etc. Good Luck! If you want to do it some time when we visit, let me know. One more thing. We use 2pressure cookers and get them both going at the same time on our Cache Cooker outside. Get done twice as fast.
